President Message

Since I have written my last message for this webpage, many exciting things have happened and many more exciting things are planned.

robert-presidentIn the arena of things that have come and gone are The Annual ACF/CCAC Golf Tournament, the American Academy of Chefs Dinner at L.A. Hotel and the N.A.F.E.M. Show at the Anaheim Convention Center.

In the arena of upcoming events are The CCAC's St. Patrick's Day Meeting and Dinner at John Francis Polytechnic High School in North Hollywood, CA, and the Joint CCAC and Orange Empire Chefs meeting in Long Beach.

The Golf Tournament was held at the Valencia Country Club. We had an outstanding turnout and Chef Lee Ciuffitelli did an outstanding job with the food. This was a highly successful event, in spite of the fact that the majority of the board members and the members did not attend.

The American Academy of Chefs Dinner at the L.A. Hotel in Downtown Los Angeles was an extraordinarily fantastic event! Not only did we honor Chef Harry Brockwell's Induction into the American Academy of Chefs Hall of Fame, we recognized many other chefs in our region including Richard Morgan, Luis Martinez and Mike Lodi. We started the evening off with a reception in an upstairs view lounge with passed hors d'oeuvres. We then went downstairs to the Ziran Restaurant, where we had a luxurious gourmet dinner prepared by Chef Kevin Harry and team. In my opinion the two best dishes of the meal were the Roasted Lamb Lollipop Purple Haze Gratin - Merlot Braised Carrots (American Lamb from Colorado) and Deconstructed Banana Split for dessert. Additionally, we recognized Chef Bob Higgins of John Francis Polytechnic High School and gave two of his students scholarships to help them pay for their upcoming studies at Johnson and Wales. We had many other important people in attendance including Michael Ty, Past President of the ACF, and Stafford DeCambra, Chairman of the American Academy of Chefs.

The National Association of Food Equipment Manufacturers Show was held at the Anaheim Convention Center. This was an outstanding show! It was all equipment and it was all modern and up to date equipment from all of the manufacturers. This was the best show that I have been to in an extremely long time. I had a chance to visit with friends that I hadn't seen in a long time. I also saw people who were trying to sneak in and out of town without connecting with their ACF Brethren. Shame on you Chef Thomas Macrina, President of the ACF!

The ACF St Patrick's Day Dinner will be held on St. Patrick's Day at John Francis Polytechnic High School. This event will be prepared by Chef Bob Higgins and the Culinary Arts Club. The dinner is a scholarship fundraiser for the students at the school. This is a family event, so bring the wife and the children for what is sure to be an outstanding meal. If you haven't seen the flier for this event please contact me. Reservations are a must!

In April, we will be having a joint meeting with the Orange Empire Chefs Association in Long Beach. This will be a dinner meeting at the Long Beach Hilton. This promises to be an outstanding event. We are currently working on the menu and ironing out the final details. Please watch for the announcement of this meeting.
In the month of June, we are working the Rational Company, the maker of fantastic combi-ovens, on a Regional Chefs Picnic, which they will be sponsoring and preparing using their mobile kitchen equipped with the latest in Rational Products. This will be a regional event for all of the ACF Chapters in the Southern California Regional. This will be a very family friendly event! Please look for our upcoming announcement on this event.

Lastly as I close , I would like you to visit this month's member spotlight where we honor Chef Bob Higgins, and to invite you to all of our upcoming events. I am looking forward to seeing event and everyone of you. Please try and attend!
